While not an ancient grain, this flour comes from a hard red spring wheat known for its high-protein baking qualities. While this flour is most similar to the flour you'd buy at the store, we recommend using 3/4 of the flour called for in your favorite recipes and slowly adding more until you've reached the desired dough consistency. Our stone-milled flour is thirsty, fresh, and nutrient dense!
